We frequently create something unique for special events or special requests.  Sometimes we just have a notion.  Sometimes inspiration can be realized by a new combination of tested components, sometimes it requires a little tweaking and redesign, sometimes new tools or ingredients facilitate change, sometimes it takes a lot of careful experimentation and trial and error…


As pastry artists we enjoy creative challenges and often have opportunities through competitions, demonstrations, and special events to face them.  Steve serves on the Board of Advisors of the annual New York Chocolate Show, the country’s largest and most significant chocolate event and is one of a handful of American pastry chefs ever invited to demonstrate in Paris or to be profiled by NPR's "All Things Considered.”
